&lt;ul&gt;&lt;li&gt; 450 grammi di pasta frolla&lt;/li&gt;&lt;li&gt; 200 grammi di zucchero&lt;/li&gt;&lt;li&gt; 75 grammi di burro&lt;/li&gt;&lt;li&gt; 30 grammi di farina&lt;/li&gt;&lt;li&gt; 9 tuorli d'uovo&lt;br /&gt;&lt;/li&gt;&lt;li&gt; 3/4 di latte&lt;/li&gt;&lt;li&gt; un baccello di vaniglia&lt;/li&gt;&lt;/ul&gt; &lt;p&gt;&lt;strong&gt;Preparazione Crostata di crema:&lt;/strong&gt;&lt;br /&gt;Prendete una casseruola, mettete i tuorli d'uovo con lo zucchero, la farina,  mescolate bene tutti gli ingredienti fino ad ottenere un composto senza grumi.&lt;br /&gt;Prendete una seconda casseruola, mettere il latte e fatelo bollire con il baccello di vaniglia aperto longitudinalmente, poi, aggiungete il latte un po’ alla volta al composto preparato in precedenza, mescolando continuamente.&lt;br /&gt;Una volta aggiunto il latte mettete il composto sul fuoco, mescolate continuamente per evitare che la crema si attacchi sul fondo, quando la crema&lt;strong&gt;&lt;/strong&gt; bolle spegnete la fiamma e aggiungete il burro a pezzetti, mescolate continuamente e lasciate raffreddare la crema.&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;Mentre la crema&lt;strong&gt;&lt;/strong&gt; si raffredda foderate uno stampo per torte&lt;strong&gt;&lt;/strong&gt; imburrato, possibilmente a bordo apribile visto la fragilità della crostata di pasta frolla,   con una sfoglia di pasta frolla&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;&lt;strong&gt;&lt;/strong&gt; spessa mezzo centimetro.&lt;br /&gt;Una volta foderato la stampo ricoprite la base con la crema,&lt;strong&gt;&lt;/strong&gt; sopra la crema posate una griglia fatta con dei pezzi di pasta frolla avanzati, oppure potete realizzare delle forme per decorare la crostata.&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;Mettete la crostata&lt;strong&gt;&lt;/strong&gt; prendiamo i fagioli e sciaquiamo con delicatezza, lascarli in acqua per tutta la notte,  per poi cuocerli in 2 litri d'acqua per circa 40 minuti o fin quando non saranno cotti.&lt;br /&gt;Prendiamo la cipolla, sedano e carota per tritarli, poi prendiamo la pancetta e tagliamola a cubetti.&lt;br /&gt;Adesso prendiamo una pentola, aggiungiamo i 3 cucchiai d'olio, insieme alla cipolla, il peperoncino e la pancetta e lasciamo soffriggere fin quando la cipolla non sarà appassita, poi bagnate con il vino bianco e lasciare evaporare un pò sul fuoco.&lt;br /&gt;Ora aggiungiamo i fagioli, carota tritata, la passata di pomodoro e il sedano, mettiamo un pò di sale e pepe e lasciamo cuocere per 20 minuti circa. Prendete una casseruola e aggiungete insieme hai molluschi, l'olio e peperoncino,  chiudete la casseruola con il coperchio,  mettetela sul fornello lasciandola bollire a fuoco normale fino a quando si apriranno le vongole.
